   Gloucester Cheese and Ale

Food and drink are combined for a filling snack that was once served after the meat or poultry course of the evening meal at posting houses and inns. It would, of course, be served with more ale.

Originally, the dish would have been made with Single Gloucester. Unfortunately, Single Gloucester is now very rare and difficult to find. You can use Double Gloucester cheese but it has a stronger taste than Single Gloucester.
Ingredients
Serves: 4

175 Gram Double Gloucester cheese, thinly sliced (6 oz)
1 Teaspoon English mustard
125 ml Brown ale (4 fl oz)
4 Thick slices Wholemeal bread, toasted
Method
Preheat oven to 190 �C / 375 �F / Gas 5. Arrange the cheese slices in the base of a shallow ovenproof dish. Spread the mustard over them.

Cover the cheese with the brown ale, then cover the dish with foil. Bake for 10 minutes until the cheese has softened. Pour the warm ale and cheese over the toast and serve immediately.
