Cheese Ramekins
These are more substantial than a souffl�. They are a good way of using up odd bits of left-over cheese.
Ingredients
Serves: 4
50 Gram Double Gloucester cheese, grated (2 oz)
50 Gram Cheshire cheese, grated (2 oz)
4 Tablespoon Single cream
50 Gram Cooked ham, finely chopped (2 oz)
50 Gram Fresh breadcrumbs (2 oz)
Few Drop Worcestershire sauce
Pinch Ground mixed spice
2 Eggs separated
Method
Pre-heat oven to 200 �C / 400 �F / Gas 6. Grease 4 ramekins.
Beat together the cheeses, cream, ham, breadcrumbs, Worcestershire sauce and mixed spice.
Beat in the egg yolks.
Whisk the egg whites until stiff. Carefully fold into the cheese mixture.
Spoon into the ramekins and bake for 10-15 minutes until risen and golden brown. Serve immediately.
If the Double Gloucester and Cheshire cheese are unavailable substitute with any mild Cheddar-type cheese and a crumbly, salty white cheese.
